What You'll Own in This Role
Kitchen Operations
Oversee daily mise en place, section management, and full-service delivery in partnership with the Head Chef.
Menu Development
Collaborate on seasonal menus, create specials, and contribute creative dishes that reflect the restaurant's identity.
Team Leadership
Lead, coach, and motivate kitchen staff; conduct briefings, manage rotas, and drive a positive brigade culture.
Food Safety & HACCP
Maintain full HACCP compliance, temperature logs, allergen management, and hygiene audits.
Stock & Cost Control
Manage ordering, stock rotation, and GP targets; reduce waste and optimise ingredient spend.
Quality Standards
Enforce dish presentation standards, taste consistency, and portion control across every service.
